1. Egg Muffins:
These delicious treats are quick to make, and easily customisable.
- You’ll need a muffin tray, fillings of your choice (finely chopped), and eggs (number will vary).
- Put your filling in the muffin tray first (fill halfway), then pour whisked egg on until just below the top.
- Pre-heat oven to 200 degrees, cooking time is around 20 minutes or until they are golden brown.
2. Chicken Caesar Salad:
This salad can be as healthy as you want depending on how much dressing, cheese and croutons you add.
- Cooked chicken.
- Any mixed salad or your choice (bought or chopped).
- Caesar salad dressing – Waitrose do the best dressing!


3. Crackers with everything:
Crackers go with almost anything! Here’s some ideas to get you started…
- Ryvita cracker with sweet chilli prawns and rocket salad.
- Jacob’s cracker with salmon, cream cheese and tomatoes.
- Water biscuit with tuna mayo, cucumber and spring onion.

4. Beans on toast:

- Your favourite beans – though if it’s not Heinz 57 we’d be dissapointed!
- Wholemeal bread (1 slice)
- If you want it as healthy as possible, don’t add any butter or condiments.


5. Homemade Soup:
Like the egg muffins, what goes in is completely your choice.
- Pre-cook your vegetables or preferred ingredients.
- Blend until smooth.
- Place in pan and simmer (average time is 30 minutes), finally add any herbs, spices or sauces.
- Easy to store and lasts several days.
6. Pitta breads:
These handy little pockets are the perfect replacement for sandwiches.
- Get your pitta and pop it in the microwave for 15 seconds to separate it.
- Fill with the food of your choice.
- Can be made at home or fresh in the office!
